Abonnez-vous!!! ♥♥♥ FOLLOW : Instagram : https://instagram.com/lloydlng FACEBOOK : https://www.facebook.com/LloydLangYoutube/ ————————————————————— MENU DE NOËL VEGAN | Wellington & Bûche façon Tiramisu Wellington (4 à 6 personnes) : 200g de Champignons hachés 200g de Haricots cuits (rouges, noirs ou blancs) 200g de Carottes hachées 100g de Tofu Fumé 100g de Châtaignes cuites 60g de Céleri haché 1 Oignon émincé 50g de Flocons d’Avoine 30g de Ketchup 2 Gousses d’Ail hachées 1/2 càs de Marmite (remplacer par 1 càs de Sauce Soja) 1 càc d’Origan 1/2 càc de Thym Sel & Poivre + 1 Pâte feuilletée végétale (de préférence rectangulaire) et un peu de lait végétal pour la dorure Cuisson : four à 180° pendant 45 minutes à 1 heure ou jusqu’à ce qu’il soit bien doré. Servir avec la purée et les légumes de votre choix et recouvrir le tout de gravy :) (recette ci-dessous) Gravy: 1 poignée de Champignons, 1 Carotte, 1 branche de Céleri, 1 Echalote, 1 gousse d’Ail (Le tout grossièrement haché) 50 cl de Bouillon de Légumes 1 /2 càs de Marmite (remplacer par 1 càs de Sauce Soja) 1 càs de Sucre 1 càs de Farine ou Fécule 1 cas de Vinaigre de Vin (remplacer par du vin rouge) Sel & Poivre Vous pouvez l’ajuster en fonction de vos goûts avec du paprika fumé ou un peu de crème végétal pour un côté plus onctueux ;) Bûche façon Tiramisu (4 à 6 personnes) : Biscuit: 4 Yaourts de Soja (2 à la vanille 2 natures pour moi) 210g de Farine de Blé 180g de Sucre 5 càs d’Huile de Colza, Tournesol ou Coco 1 Sachet de Levure Chimique (9g) 1 Sachet de Sucre Vanillé 1 càc d’Extrait de Vanille Cuisson : Four à 180° pendant 50 min. Préparer la veille idéalement afin de faciliter la découpe! Crème: 600g de Crème végétale à fouetter (coco marque Kara ou soja spécial chantilly) 300g de Yaourt de Soja Vanille (aussi appelé dessert soja vanille) 60g de Sucre 1 sachet de Chantibio ou Chantifix 2g d’Agar-Agar (la moitié d’un petit sachet) 1 pincée de Vanille en Poudre Montage: 1 petite Tasse de Café fort 1/2 càc d’Extrait d’Amande Amère (remplacer par 1 à 2 càs d’Amaretto) 4 càs bombées de Pâte à tartiner de Speculoos (remplacer par ma recette de Nutella Vegan) Laisser poser au frigo au moins 24h mais j vous conseille fortement 48h de temps de pause. Festive Portobello Mushroom Wellington: Ingredients: For the mushrooms: 4 portobello mushrooms 4 cloves Garlic (minced) 1 tbsp Fresh Thyme (leaves) 1 tbsp Fresh Rosemary (finely chopped) Splash Olive oil Sprinkle Salt Sprinkle Pepper For the Nut Roast Filling: Splash olive oil 1 large red onion (finely chopped) 1 tbsp fresh rosemary (finely chopped) Sprinkle Salt Sprinkle Pepper 1 cup white wine 1/2 tbsp brown sugar 2 cups chestnuts 2 cups pecans 2 slices seeded bread 1/2 cup vegetable stock For the Wellington case: 2 blocks short crust pastry (you will have some left over) 1/2 cup soy milk Method: 1 Put the portobello mushrooms in a baking tray & cover in a splash of olive oil 2 Sprinkle the rosemary, thyme, salt, pepper & garlic over the top of the mushrooms 3 Bake at 200℃ (392℉) for 15 minutes & once they’re ready, set to one side to cool (this gives you the time you need to prepare the next stage of the dish) 4 Put the red onion in a pan with olive oil & fry until it’s translucent 5 Add the rosemary, thyme, salt, pepper & cook them together until they start sticking 6 Add a cup of white wine & cook the alcohol off 7 Add some brown sugar & mix it round so it caramelises, pour the mixture in a glass mixing bowl 8 Put the chestnuts, pecans & bread in a food processor & whiz them all up into crumbs 9 Add the crumbly mixture into the glass bowl with the onions & pour in the vegetable stock (gradually!) 10 Stir the mixture round with a wooden spoon so it clumps up (it needs to feel like plasticine) 11 Push 1 cm thick layer of the mixture onto a sheet of shortcrust pastry (laid out on a baking tray) 12 Mould the mixture with your hands into a large, thin, wide sausage shape 13 Put the pre cooked portobello mushrooms on top of the “sausage” 14 Encase the mushrooms in the rest of the nutty mixture & smooth it out with your hands 15 Carefully lay the second sheet of shortcrust pastry over the top of the nut roast mound 16 Push the pastry down with your fingers 17 Cut off the edges of the pastry with a pizza cutter (or a very sharp knife) & remove the excess (use this to cut of shapes to decorate your wellington) 18 Seal the edges with a fork - take care here, make it look good! 19 Decorate your wellington with shapes you cut out of the spare pastry & fork in air holes 20 Bake at 200℃ (392℉) for 40 minutes (be sure to CHECK after 30 minutes, if it looks ready, take it out of the oven!) 21 Use a bread knife to carve the Wellington into slices 22 Serve with all the trimmings BOSH! Definitely be sure you have mushrooms, green beans, rolls, carrots, vegan cheese, potatoes, vegan milk, and more on hand. The main part of this meal will be the Seitan en Croute, better known as Beef Wellington. You can find the full recipe for this on the channel at the link below: https://www.youtube.com/watch?v=eORRYuOFYpo Make as many of these as you need to feed your guests. One of these is generally enough for two people. What Christmas dinner would be complete without stuffing? Candice has also already made a video detailing how to create your vegan stuffing which you can find on the channel right here: https://www.youtube.com/watch?v=aOxrAsnAo4k Essentially it consists of day old bread broken into pieces and mixed with parsley, sage, poultry seasoning, celery, thyme, and a bit of fleur de sel. Add sauteed onions to that mixture along with vegetable stock and put it into a casserole dish. Stick that in the oven and move on to your next dish. You can find more precise and complete directions at the link above. Moving right along, it's time to take out some of that inner rage and smash some potatoes. Everyone knows how to make mashed potatoes, but do you know how to make smashed potatoes? Boil some good sized potatoes until they are somewhat soft, put them on a baking sheet and smash them each fairly flat with a tumbler or some other tumbler sized object. Drizzle a bit of olive oil on each one, add freshly crushed pepper and a pinch of salt, then place them into the oven along with your stuffing. Next on the list is carrots and green beans. Candice is a big fan of roasted carrots and green beans so that's what she's going with for this dinner. Chop the ends off of your carrots and peel them putting them into a baking dish and drizzling them with a bit of olive oil followed by some crushed black pepper, salt, and garlic powder. Follow the same process to make your green beans with the exception of course that you won't be peeling them, you'll be chopping off the ends. Put both of these into your now no doubt nearly full oven. Our next step will be to create our cranberry sauce. Candice claims that no one really eats the cranberry sauce except her and one other guest. Regardless, she's going to make it, and she's going to make it from scratch. Add fresh cranberries to a sauce-pot, add in brown sugar, raw sugar, and some fresh squeezed orange juice. Set your heat somewhere between medium and medium-high and soon you will start hearing pops. Let that continue to cook down, feel free to mash up your cranberries if you see fit, or just leave them whole. The important part here is that they get soft. By now most of what's in your oven is going to be cooked, be sure to keep an eye on it and not overcook it. The more prepared you can be for your guests the less stressed out you'll be when the magic hour arrives to serve them Christmas dinner. Pull out all the dishes that are done and cover them with tin foil setting them on the counter. Now it's time to make some garlic aoli. In a mixing bowl add vegan mayonnaise, garlic, fresh lemon juice and whisk well. After mixing add just a touch of paprika and whisk again. That is all there is to making delicious vegan garlic aoli. For dessert Candice has chosen to make Rafeallo. Seitan Beef Wellington Recipe; This recipe makes 1 large Wellington, serves 6-8 Seitan ‘Beef’ Wet bowl 1 Veg Stock cube 240ml Hot water (1 1/2 Cups) 300g Beetroot 3T Soy Sauce 1T Vegetable Oil 1T Worchestshire sauce 1/2 Raw onion Dry Bowl 350g Vital Wheat Gluen 70g Plain flour 4T Porcini mushroom powder 1tsp Salt Pate 4 Cloves garlic Handful of rosemary 500g Chestnut mushrooms 200g Chestnut puree Pinch Salt & Pepper 500g Puff pastry Preheat your oven onto 180C Make your stock up, leave aside to cool. Put the rest of the wet ingredients in the Nutri Bullet cup, blitz, then add to your stock and whisk. Put all your dry ingredients into a large bowl and stir to combine. Prep your area before you mix the dough together, cut two long lengths of extra strong good quality foil (if you use cheap thin foil for this, it may burst from the pressure of the seitan in the oven). Then add the wet ingredients to the dry bowl and stir, continue to stir and knead (a little) with the spoon, avoid using your hands as it will stain. Then drop the seitan straight from the bowl onto one end of one of your foil sheets, quickly roll before the seitan spreads. When rolling avoid touching the foil with your nails as this will tear, so you roll and tuck in the ends as you go, once you've rolled the full sheet then twist the ends (not super tight as you need some space for expansion in the oven, to avoid bursting) then repeat by using a second long sheet of good quality foil as extra strength. Put your seitan in the oven for 1hr 20mins. Once cooked leave out to get to cool then pop in the fridge, the seitan is best done the day before and left in the fridge overnight, do make sure you refrigerate it for a min of 6-8 hours min, you could always do it weeks in advance and freeze it too. Now the pate, finely chop the garlic and rosemary pop in a frying pan to soften, then add the chopped chestnut mushrooms, chestnut puree and a pinch of salt, cook all this down for at least 20mins to cook off all the liquid that the mushrooms will release, keep cooking until the pate is firm, this will mean you don't get a soggy bottom in the pastry. Then pop your pate in the fridge to cool. Now, layout clingfilm onto your surface and spread the pate on the cling film in a small rectangle shape, unwrap your seitan and place on the pate, roll all together so you end up with the pate covering the seitan and wrap this in cling film, place it in the fridge for 20mins to firm together before rolling in pastry. You could freeze it at this point, so all the work is done in advance for Christmas, meaning on the day you just need to wrap it in pastry and bake. Preheat your oven to 190C Put some plain flour on your surface and rolling pan, roll the pastry into a rectangle a close size to the seitan, place your seitan on the pastry, brush some plant based milk on the edges of the pastry, fold one side of the pastry up and push it down, then the other side too, fold the ends in and tuck up, flip the wellington over so the seam is on the underneath and place straight onto some grease proof paper on a baking sheet. Score the top of the wellington, brush a little more milk on top and sprinkle some sea salt flakes (or salt) on. Bake in the oven for 30-40mins, until golden, if unsure give it an extra couple of mins to make sure the pastry is cooked underneath. Once baked leave to cool for 10mins before slicing. One very fancy dish that will blow everyone's minds on Christmas Eve is Wellington Seitan. It is not only appealing to the eye, but it's also so delicious, that everyone will want more! The mushrooms and the mustard enhance the taste of the seitan really well and the puff pastry makes it crunchy and lavish. Ingredients: ( Makes about four or five servings) - 1.5 pounds seitan (Recipe here: https://www.youtube.com/watch?v=iOeE-5TGK9A) - 1 pound mushrooms - 1 cup flour - 1/4 cup vegetable oil, plus more for greasing the pan - 1/2 cup mustard (I like using Dijon mustard, but you can use the one you prefer) - 1.5 pounds puff pastry dough (Recipe here: https://www.youtube.com/watch?v=9JRD05ci7UU) - 1/4 cup plant based milk - 3 tbsp maple syrup - 1 dash rock salt Procedure: - Chop the mushrooms finely or place them in a food processor. - Put on a pan on medium heat to extract all the moisture. Set aside when ready. - Mix the flour with the oil. - Add enough water to make a runny mix. - Heat up an oiled pan. - Pour some of the mixture on it. - Tilt the pan so there's a thin even layer on it. - Let that side cook on medium fire. - When the edges detach, you can flip it. - Make as many crepes as you need to wrap the seitan. - Smother the seitan in mustard. - Line the crepes on a piece of film. - Spread the mushrooms on top. - Place your seitan at the center. - Add more mustard if needed. - Wrap it tightly, chill for 20 minutes. - Roll out the pastry dough. - Place the unwrapped seitan at the center. - Roll it in the puff pastry dough. - Put water on the seams so they stick. - Place on a tray lined with silicone paper. - Preheat the oven at 400ºF. - Add a decoration if you're feeling creative. - Brush with a mixture of vegan milk and maple syrup. - Put some rock salt on top. - Bake for ten minutes, then, lower the temperature to 350ºF and bake for 15 more minutes. - Take it out of the oven when it's golden brown. - To serve, cut in thick slices. - Serve immediately. - Enjoy!
